Burritos Alinstante had its humble beginnings in 1989 as a small tortilla factory called Chavez
Tortillas. Shirley Chavez worked diligently to promote sales without great success. As a last resort and to jump start sales she decided to encourage people to try her delicious tortillas by adding food to them. She put her heart into cooking the food that she loved best and offering a burrito to anyone who walked into her store. Suddenly, those people started coming back for more . . . and thus Burritos Alinstante was born!
In the summer of 1997, tragedy struck! Shirley lost her life to a drunk driver in an automobile
accident. Her daughter, Mary Ellen, continued on with the burrito business. One small restaurant in Belen has grown to four locations including Los Lunas, Albuquerque and Bosque Farms.
Today, Mary Ellen is still continuing Shirley’s tradition of serving wonderful homemade food in a hurry. The menu includes all the original favorites: Carne Adovada, Beef Steak, Potatoes, Beans, and much more. Production continued to be an in-house process where they make everything on the menu fresh daily, from scratch, just like you would at home.
